    2 Tbsp olive oil
    1 c. chopped onions
    1 c. chopped parsley (1/3 c. dried parsley)
    2 c. chicken stock
    Salt to taste
    Cayenne pepper to taste
    1 lb chicken, cut up and cooked
    2 lb. smoked sausage
    3 c. white rice, long grain
    3 c. water


We enjoy this with Tabasco sauce and ranch dressing. Can add 1/2 c. bell pepper and 1 c. green onions to the recipe before cooking.


Add all ingredients. Stir together well. Cover with tight fitting lid. Bring to boil, then turn down to simmer for 20 minutes. Mix well before serving.

Serving Size: Makes 8 - 1 cup servings
