Ingredients

    1 lb lean ground beef
    1 can dark red kidney beans
    2 cups tomato juice
    1 small onion (chopped, optional)
    1 can stewed tomatoes
    16 oz macaroni or rice (this one used rice)
    Salt to taste

Directions

Brown ground beef with onions in skillet until onions are soft and meat is brown. Cook macaroni or rice according to package directions. Combine all ingredients in a large pot and simmer for 30 - 60 minutes.

Serving Size: Makes 10 1-cup servings
