    8 Chicken thighs (about 2 Lb, skins removed)
    14.5 oz (1 can or half a box) diced tomatoes
    1 can (6 oz) tomato paste
    1/2 cup chopped onion
    1 Tbsp minced garlic
    1 tsp Italian Seasoning
    1/2 tsp salt (could use more if using unsalted tomatoes)
    1/4 tsp black pepper


My cooker runs a little hot, I do 5 hours on low without the 1 hour on high first


Mix all ingredients EXCEPT for chicken in a bowl, let sit while skinning chicken
Strip skins from thighs, leave bones
Place chicken in bottom of slow cooker
Pour tomato mixture over chicken
Cook on HIGH for 1 hour, followed by 4-5 hours on low

Serving Size: 8 thighs, 1 or 2 per serving (depends on the person)
