    1 1/4 cups 1% milk (1 T vinegar added)
    1 1/2 cups old fashioned oats
    1 cup grated carrots
    1/3 cup butter melted
    1/4 cup brown sugar (packed)
    2 eggs
    1 Tbsp. baking powder
    1/2 tsp. salt
    1/2 tsp. cinnamon
    3/4 cup raisins
    1 1/2 tsp. grated orange rind
    1 1/2 cups all-purpose flour
    1/4 cup granulated sugar


GREASE 12 large muffin tins or line with paper baking cups.
POUR milk over oats in large bowl; stir to mix. Let stand 5 minutes. Stir in carrots, butter, brown sugar, eggs and orange rind.
MIX remaining ingredients in bowl; stir into oat mixture. Spoon into muffin cups, filling each to the top.
BAKE @ 400F (200C) for about 20 minutes or until firm to the touch. Cool in pan 5 minutes; remove muffins and cool on rack. Store in airtight container.
