Ingredients

    1 pound - Ground beef, extra lean
    1 tablespoon - Extra light virgin olive oil
    1 cup - onions
    3 garlic cloves
    1 - 6 oz can tomato paste
    3 cans beans, I use pinto
    2 cans diced tomatoes
    Basil to taste
    Chili powder to taste
    Pepper to taste
    2 bay leafs
    salt to taste


Directions

Brown ground beef in olive oil, add onions and garlic. Add tomato paste, mix well. Add beans, canned tomatoes, and two cans of water. Add seasoning. Check flavor periodically to see if it needs seasoning. You can simmer this all day, but at least an hour.

    I didn't have pinto beans so I used one can of black beans and one can of white kidney beans. Also, along with the other spices I added about 2 tsp of cumin powder. It was great! I topped it with a little reduced fat cheddar and it was a very flavorful and satisfying lunch! - 3/30/11
