    12 oz. chicken breasts, cut in chunks
    2 oz. olive oil
    64 oz. low sodium chicken broth
    2 cans diced tomatoes, no salt added
    1 can enchilada sauce
    2 c. chopped onion
    2 c. chopped celery
    2.5 c. frozen sliced okra (one bag)
    1 can garbanzo beans, no salt added


Brown chicken in oil. Add all other ingredients and simmer until vegetables are soft, 30 minutes on the stove or several hours in a crock pot. Check for salt, pepper and general seasoning before serving.
