Ingredients

    olivie oil
    onion, finely chopped
    garlic, minced
    mushrooms, finely chopped
    red pepper, chopped
    celery, diced
    garlic powder
    onion powder
    Cayenne pepper
    Sage, ground
    crushed black pepper
    salt (a dash)
    Red Lentils (or other color of your choice)
    White Kidny beans
    Canned, diced tomatoes
    Chicken broth (or vegetable broth for vegetarian option)

Tips

adjust spices and seasonings to your personal taste preference. If you don't like heat, you can omit the cayenne and reduce the black pepper.


Directions

saute onion and garlic in olive oil until soft, add mushrooms, peppers and celery and saute for a few minutes. Add seasonings and cook until fragrant. Add tomatoes (with juice, about half a can) and add chicken broth. Add beans and lentils and cook until lentils are softened, about 30 minutes.

Serving Size: makes 9 3/4 cup servings
