I love this creamy, low-fat mushroom soup recipe on a cold day, easy to make and delicious! I love this creamy, low-fat mushroom soup recipe on a cold day, easy to make and delicious!
Number of Servings: 4


    3 cups mushrooms
    1 tbsp olive oil
    3 cloves garlic
    1 tbsp flour
    1 1/2 cups vegetable broth
    1/2 cup skim milk
    1/2 cup fat free sour cream*
    1 egg white
    1 tbsp salt
    1 tbsp pepper

    Make your own sour cream from low fat cottage cheese.


Once done to the consistency of your choice, blend the soup to make it as smooth or as chunky as you'd like.


Add olive oil, garlic, salt and pepper and mushrooms in saucepan and saute on med-high heat for about 5 minutes. Add flour and stir. Add veg broth and bring to boil. In a separate bowl, beat together the sour cream, milk, and egg white. Add to the broth and keep on low heat for 10 minutes or more.

* To Make Sour Cream: Add 2 tablespoons of milk and 2 tablespoons of fresh lemon juice to your cottage cheese and blend til smooth.
