    3 sweet onions, chopped
    3 cloves garlic
    Fresh Basil, Oregano, Parsley (if you can't find fresh, substitute with dried)
    Salt & Pepper
    2 cans beef broth
    2 large cans crushed tomatoes
    1 cup 1% milk

    Optional: Mozzarella Cheese for serving


I like to brown the onions and garlic until they begin to caramelize before adding in the other ingredients to get the sweet caramelized onion flavor.


In a big soup pot, saute onions and garlic in olive oil until soft and translucent.
Add tomatoes, broth, & spices and simmer for an hour.
Add milk and puree. I used an immersion blender. If you don't have an immersion blender, you can pour the whole thing into a blender/cuisinart, or just chop the onions very fine and not blend it.

If desired, cut up fresh mozzarella and place in the bottom of bowls.

Ladle soup over the cheese and serve.

Serving Size: Makes about 8 2-cup servings
