Ingredients

    1 fillet of fresh salmon (raw) 180g
    1 cup mesculin lettuce
    1 medium size tomato
    2 tsp. Red Wine Vinegar

    Salmon Marinade:
    2 Tbs. Soy Sauce
    1/4 c. Vegetable broth

Directions

Place your fillet of salmon in a ziplock back and add marinade and refrigerate while your oven preheats.

Place a baking tray in oven on top shelf (close-ish to element) and preheat oven to 200 Celsius. Take salmon fillet out of marinade, drip dry and place on pan and bake for 15-20 minutes.

Prepare side salad and drizzle 2 tsp. of Red Wine Vinegar over the top.

Salmon will be done when golden brown.
Serve immediately!
