This recipe is from my 8th grade home ec class in 1988! This recipe is from my 8th grade home ec class in 1988!
Number of Servings: 12


    1-3/4 cup flour
    1-1/4 tsp. baking powder
    3/4 tsp. salt
    1/2 tsp. baking soda
    2/3 cup sugar
    2 large eggs
    2 TBL. milk (skim)
    2-3 ripe bananas, mashed
    (about 1-1/2 cup)


In a medium mixing bowl, stir together all dry ingredients EXCEPT sugar. In a large mixing bowl, cream together sugar & shortening until light and fluffy (or even a little grainy). Add milk & eggs one at a time and beat until smooth. Add flour & bananas alternately to creamed mixture. Beat until smooth. Bake in greased & floured loaf pan at 350 degrees for about an hour (60-65 min.) or until toothpick inserted in center of loaf comes out clean.
