Ingredients

    2 cups Nicola Potatoes, cubed into 1/2" pieces
    2 tbsp cooking oil
    1/2 lb Turkey Kielbasa, cubed into small pieces
    1 1/2 cups yellow onions, finely chopped
    3 cloves garlic, minced
    3 cups stock, chicken or vegetable (or use water)
    1/2 - 1 head cabbage, shredded or thinly sliced
    2 -3 carrots, shredded
    salt & pepper to taste

Directions

In soup pot, cook onions and kielbasa in cooking oil until onions are soft, set aside. Boil potatoes and garlic in salted stock until soft. Mash ptotatoes while in stock and transfer to soup pot mixing with kielbasa and onions. Add cabbage and carrots and boil for 3 minutes. Season to taste.
