    1.5 lb chicken breast (diced)
    4 cloves of garlic
    2 cans of diced tomatoes with green chilies
    1 small can of diced green chilies
    1 can of no salt added diced tomatoes
    1 15 oz can of tomato sauce
    .5 cups reduced sodium, low fat chicken broth
    1 can Rosaritos Low Fat black bean refried beans
    1/2 package of whole wheat spaghetti noodles


Occassionally stir the chili ingredients so that the chilies do not get burned on the bottom of the pot. Adding more vegetables would make this chili even "meatier" (would be good with diced red & green peppers)


Cook the pasta according to package directions. While the water for the pasta heats up, in a skillet sprayed with non stick cooking spray, brown the chicken with the garlic. In the meantime, combine all of the other ingredients (except chicken and pasta) in a stockpot. Bring to a boil and then reduce heat and simmer. Once the chicken and pasta are done, throw into pot and cook until heated.

Serving Size: Makes at least 15 one cup servings
