    1tbs olive oil
    1onion halved and thinly sliced
    1poblano pepper, seeded and sliced
    2tsp chili powder
    1tsp cumin
    16 oz spaghetti broken into thirds
    2 14oz cans fire roasted diced tomato drained
    1bunch cilantro chopped
    4oz Monterey cheese
    2 14oz cams kidney beans


Heat oil in large skillet add onion and poblano cook till soft about 3 min. Add seasoning cook 2 min. Add on un cooked pasta, cook 5 min.
Add tomato, simmer till liquid is absorbed. Add broth, biol cook 1 min, reduce heat cover simmer till pasta soft, about 6 min, stir in beans, and cilantro cook 3 min, serve with cheese .
