    2 # Chicken Breasts
    1 tsp salt
    1/2 tsp pepper
    2 tsp olive oil
    2 cups sliced onion
    1 cup apricot (just fruit spreadable)
    2 Tbsp red wine vinegar
    2 Tbsp low-sodium soy sauce
    2 tsp minced ginger root
    1 teaspoon dried rosemary


sprinkle chicken with salt and pepper. Place in greased 9X13 baking pan. Saute onions in olive oil for 5 minutes. Add jam and remaining ingredients to pan, stirring constantly with whisk until combined. Pour over chicken. Bake at 350 degrees for 45 minutes
