Number of Servings: 8

Ingredients

    mushrooms are 8 oz. fresh
    the cheese is 4 tblsp.
    the asparagus is 6 oz. fresh
    8 eggs
    1 tblsp. extra virgin olive oil
    1 clove of garlic

Directions

preheat broiler.
Wisk eggsand 2 tblsp of cheese in a bowl. Sprinkle with salt and pepper. Heat oil in a 10-inch overproof skillet. Add garlic, saute 30 seconds. Add muchsrooms and asparagus, saute until tender, about 5 minutes. Add eggs, stir to blend. Reduce heat to medium low, cover and cook until eggs are almost set, about 5 minutes. Sprinkle with remaining 2 tblsp. of cheese. Transfer to broiler and broil until set.
