    1/2 cup Liquid Egg Substitute
    1/8 Tsp Salt
    1/4 Tsp Black Pepper
    1/2 Tsp Thyme
    1/2 Tsp Tarragon
    1/2 Tsp Sage
    1Tbsp Parsley
    1/2 Cup Green Pepper, diced
    1/4 Cup Onion, diced fine
    2 Tbsps Low Fat Cheddar Cheese, shredded


Use fresh herbs when available. These eggs would also taste wonderful with turkey breakfast sausage.


Beat eggs with salt and pepper, set aside. Spray nonstick pan with nonstick spray. In a medium skillet over medium heat add seasonings, bell pepper, and onion. Cook 5 to 7 minutes, until green pepper and onion are tender. Set aside.

Pour egg mixture into skillet. Cook stirring with a spoon until eggs are the desired consistency. Top with cheddar cheese.

Serving Size: Makes 2 servings
