    1.5 cups all purpose flour
    .5 cups whole wheat flour
    1/2 tsp salt
    1/2 cup splenda
    1 cup plus 1 T skim milk
    2 eggs
    4 T melted margarine
    1/3 cup low fat sour cream
    2 tsp vanilla
    1 cup blueberries
    1/2 cup icing sugar


I like to add cinnamon to the mix to add more flavor. Another option is to add in some lemon zest to the muffins and/or glaze.


Preheat oven to 400 degrees. Spray muffin tin with non-stick spray.
Mix dry ingredients in a bowl. In a separate bowl blend 1 cup of the milk, eggs, margarine, sour cream and vanilla.
Mix wet and dry ingredients until just blended being careful not to over mix. Fold in blueberries.
Spoon batter into muffin cups.
Bake about 20 minutes or until they test done. Cool 10 minutes on wire rack.
Mix icing sugar and remaining milk to make a glaze. Drizzle over muffins after they have cooled.
