Adapted from one of my favorite Mennonite Cookbooks. Adapted from one of my favorite Mennonite Cookbooks.
Number of Servings: 10


    1 T olive oil
    1 small onion, chopped finely
    2 c chicken or vegetable stock
    12 oz can evaporated skim milk
    2 cups pumpkin puree
    1/4 tsp. thyme
    1/2 tsp. nutmeg
    1/4 tsp. ginger
    1/2 tsp. cinnamon


In a large heavy pan heat olive oil then add onion. Sautee until soft but not brown. Add pumpkin puree, chicken/vegetable stock and spices. Bring to a boil then reduce heat and simmer 10-15 minutes. Stir in evaporated milk to blend. Continue simmering until heated through. Makes 10 one cup servings.
