    -4 cups of vegetable broth
    -4 cups of water
    -1 cup of rinsed brown or green lentils
    -1 cup of brown rice
    -1 cup of Barilla Plus elbow macaroni
    - salt and pepper to taste
    -1 tbsp each turmeric, coriander and cumin
    -1 tbsp olive oil


Bring the water and broth to a boil in large stockpot. Add lentils, oil, and spices. Return to a boil, then lower to a simmer. Cover and cook 20-30 minutes, until lentils are tender. Return to a boil and add rice. Lower to a simmer and cook covered for 20-30 minutes, adding water as needed and stirring occasionally. When rice is cooked, bring mixture to a boil and add macaroni. Stir frequently and add more water if needed. Cook ten minutes. Add salt and pepper to taste.

While the koshary cooks, saute the onion with 1 T olive oil until it's softened. Add the diced tomatoes (2 cans, with juice) and cook down until the mixture is slightly thickened.

Serve the koshary topped with the tomatoes.

Note: A serving is one cup of koshary and approximately 1/2 cup of topping.
