    1 box - Jiffy Corn Muffin Mix
    1/4 cup - Eggbeaters
    1/3 cup - milk
    1 sm. can of chopped green chiles about 1/4 cup or if you have access use 1-2 freshly roasted green chiles roughly chopped


Works well with jalapenos too!


Preheat oven to 400 degrees. Mix all the ingredients together saving the milk for last, you may not need all that milk to get to the consistency you want (slightly thick, definitely lumpy) I use an 8" cast iron skillet to make my cornbread, Pour mix into round or square baking pan, sprayed with non stick cooking spray. Let the batter rest for 5 minutes. Bake for 20-25 minutes, until golden brown. Let stand for 5-10 minutes before slicing and serving. Enjoy!
