Ingredients

    2 cups whole wheat flour
    1 cup mashed zucchini
    1 egg
    1 tbsp baking powder
    1/2 tsp salt
    3/4 cup skim milk
    1 tsp cinnamon
    1/2 tsp nutmeg

Directions

MIx all ingredients together. Batter will be sticky. Spoon into muffin pans (with liners). Bake at 400F for 20 minutes
