    3 boneless, deboned chicken thighs, cooked
    1 large apple
    1 large carrot
    3 medium scallions, diced
    6 T. Miracle Whip light
    Juice from 1 lemon
    1 T. cumin
    1/2 t. ground ginger
    1/2 t. chili powder


Brown chicken in 1 T. olive oil turning to achieve even cooking, until cooked through. While chicken cools and drains:

Grate 1 apple and 1 carrot and dice 3 medium scallions. Place in medium-large bowl. Cover and put in refridgerator until chicken is ready. Mix 6 T. Miracle Whip light dressing, juice from one lemon, 1 T. cumin, 1/2 tsp. ground ginger, and 1/2 tsp. chili powder. Place in fridge.

When cool, remove skin and bone from chicken and cut into cubes. Add to ingredients in bowl and pour dressing over all. Toss to coat. Spread one cup on your choice of tortilla wrap, and enjoy!
