    4 oz dry soba noodles
    non-stick cooking spray
    1 to 3 cloves of minced garlic
    2 tbsp soy sauce
    1 cup fresh mushrooms
    3 cups fresh spinach


Bring medium pot of water to a boil. Add the soba noodles and boil for 3 to 4 minutes, or until the noodles are al dente. Drain the noodles and rinse them with cold water.
Meanwhile, heat a large saute pan or wok over medium-high heat. Spray the pan liberally with non-stick spray.
Add the minced garlic and mushrooms and stir frequently until the garlic and mushrooms start to soften and brown lightly.
Add the spinach and soy sauce to the pan, stirring frequently until the spinach has wilted.
Toss the vegetables with the soba noodles and season to taste with additional soy sauce, if desired.
