    1 lb extra lean ground beef
    1 Tbs olive oil
    1/2 c diced celery
    3/4 c dices onion
    2 cloves garlic
    1 15 oz can diced tomatoes
    1 15 oz can tomatoe sauce
    1 Tbsp Italian seasoning
    1 Large Green Pepper cut in thick strips
    1 1/2 C long grain wild rice, Cooked as directed
    1/4 c parmesan cheese


It could be made made quicker with instant brown rice. Or even good as vegetarian without the beef. Serve with tossed salad


Get rice on cooking as directed. Heat oil and saute garlic, onions, celery until translucent. Add ground Beef and brown. Stir in diced tomatoes, cooked rice and italian seasoning (to taste).Simmer 5 minutes to blend flavors. Pour 1/2 of sauce into bottom on pan. Nestle the pepper strip in sauce. Cover with rice mixture and remaining sauce. Cover tightly with foil and bake at 350 for 30 minutes. Uncover and sprinkle with parmesan cheese bake another 10-15 minuts
