    2 cups fresh cranberries, chopped
    1 apple, chopped
    1 orange, membranes removed and chopped
    1 8 oz can crushed pineapple
    1/4 cup orange juice concentrate
    1 3 oz. pkg. Sugar-Free Jello, Raspberry Flavor
    1 3 oz. pkg. Sugar-Free Jello, Cherry Flavor


Mandarin Oranges could be used in place of the regular orange, but this would increase the calorie and sugar content.


Bring 2 cups of water to boiling in a Pyrex measuring cup and stir in both packages of Jell-O until completely dissolved. Stir in orange juice concentrate and all the juice drained from the pineapple.
Chop cranberries and put into a large jello mold or pretty glass dish. Pour the gelatin mixture over the cranberries and stir until well mixed. Let this set on the countertop several hours (overnight is best). DO NOT REFRIGERATE. As the berries marinate in the gelatin mixture, they will absorb the sweetness of the Jell-O and juices, so no sugar is needed.
The next morning, add the rest of the fruit and stir until mixed completely. Refrigerate several hours or until firm.
Changes and/or additions: Orange Pineapple Apple Cocktail Concentrate can be used in place of Orange Juice Concentrate.
I like to add 1/2 cup chopped pecans, but this will, of course, affect calorie and fat levels.
