    1 small head of Napa cabbage, sliced into thin shreds
    1/4 cup onion, diced
    1 cup of grated carrots
    1/2 cup low fat buttermilk
    1/4 cup light sour cream
    1/4 cup mayonnaise
    1 Tbsp apple cider vinegar
    1 tsp Dijon mustard
    1 packet of Splenda or other sweetener
    Salt and pepper, to taste


Cup up cabbage, sprinkle with salt, and set aside for 20 minutes. Then rinse, and squeeze out any water.

Alternately, you can steam the cabbage, rinse it with cold water, and then wring it out.

Add carrots and onions.

In a large bowl, whisk the remaining ingredients. Add the vegetables, and toss until thoroughly coated. Season to taste with salt and pepper.

Chill in the refrigerator for one hour, and then serve.

Serving Size: Make approximately 4 one cup servings
