This is a recipe my mom gave me for Oat Bran Muffins. I like that they contain so much fruit. This is a recipe my mom gave me for Oat Bran Muffins. I like that they contain so much fruit.
Number of Servings: 12


    2 1/4 cups Oat Bran
    1/4 cup Chopped Almonds
    1/2 cup Dried Cranberries
    2 tbsp Baking Powder
    1/2 tsp Salt
    3/4 cup Milk
    1/4 cup Honey
    2 Eggs, slightly beaten
    2 tbsp Extra Virgin Olive Oil
    2 Bananas, mashed
    1 Apple, diced
    1/2 tbsp Butter


It took some trial and error to discover the pan freezing technique. Doing this help the muffins come out without resorting to a knife to cut them off the sides of the pan!


Preheat the oven to 425. Use butter to grease the muffin pan and put the pan in the freezer. In large bowl combine Oat Bran, nuts, cranberries, baking powder and salt. Add remaining ingredients; mix until dry ingredients are moistened. Evenly distribute the mixture into the muffin pan. Bake 18-20 minutes.
