    8 Cups Chicken Broth
    2 large Chicken Breasts, Boneless Skinless
    1 onion, diced
    3 cloves garlic, minced
    1 large pablano pepper, diced
    1 can diced tomatoes
    3 cups cooked brown rice
    juice of 1 lime
    1/2 tsp cumin
    1/2 Cilantro


Never add your cilantro until it is served or the herb looses its flavor.

(You can also garnish with avocado but that is not included in this nutrition breakdown.)


pan cook, roast, boil or cook chicken on a Forman grill (we prefer the Forman) Once it has cooled chop into bite size portions or shred.
Start rice cooking.
In a large soup pot bring broth to low boil and add minced garlic, diced onions, and pepper and allow to cook while rice is cooking. When the rice is done add it to the pot along with can of tomatoes (or approx 3 fresh tomatoes, diced) and your chicken. Add the juice of 1 lime and the cumin. Allow to simmer for 5 minutes and serve.
