Ingredients

    1/2 cup Yellow Cornmeal
    1/2cup Bread crumbs, dry, grated, plain
    1 tspTarragon, ground
    1 tsp Ginger, ground
    1/2 tspSalt
    1/4 tsp Cayenne Pepper
    1/4 tsp Black Pepper
    3 egg whites
    2 Tbls Milk, nonfat
    1/2 cup Flour
    6 (6 oz) Chicken Breasts, Boneless/Skinless

Directions

In shallow bowl, combine the first seven ingredients. In another shallow bowl, combine egg whites and milk. Place flour in third shallow bowl. coat chicken with flour, dip in egg mixture, then roll in cornmeal mixture. Place in 15 x 10 x 1 baking pan coated with nonstick cooking spray. Bake uncovered at 350 for 40 min. Spritz with butter-flavored spray. Bake 10 -15 min longer or until juices run clear,
