Introduction

Number of Servings: 4

Ingredients

    3 aubergines
    2 tbsp lemon juice
    1 tbsp olive oil
    1 litre vegetable stock
    1 tsp salt
    1 tsp ground black pepper
    100ml reduced fat crème fraiche
    10 leaves of basil

Directions

1. Burn the skin of the aubergine on a gas hob (or under the grill) until flesh is soft (around 15 min on gas hob) - you need to burn it to impart the smoky flavour that is essential to the soup.
2. Leave to cool and then scoop out the flesh into a big pan (big enough to hold all the soup)
3. Add stock, lemon juice, oil, salt and pepper
4. Bring to boil and then turn to simmer for 30 min
5. Stir in crème fraiche, serve in bowls with torn basil leaves on top. Delicious!
