    2C. Fiber One cereal
    2 Tbsp. Smart Balance Light butter spread (melted)
    2 Tbsp. Egg Beaters
    PAM No-Stick Spray
    2/3C. chopped onion
    2/3C. chopped broccoli
    1/2C. finely chopped red bell pepper
    5 slices Jones round Canadian bacon (diced)
    1C. Egg Beaters
    1C. fat free milk
    3/4 tsp. Herbes de Provence
    fresh ground black pepper, (optional)


1. Preheat oven to 350 degrees. Lightly spray 9" to 9-1/2" pie plate with cooking spray and set aside.
2. Finely grind the Fiber One cereal (a coffee grinder works well for this) and add to the melted butter in a bowl. Add the 2 Tbsp. Egg Beaters and mix well.
3. Press the cereal mixture into the pie plate and up the sides. Bake for 10 minutes. Remove from oven and set aside.

1. Spray medium skillet with cooking spray; heat over medium heat. Add onion, broccoli and bell pepper; cook and stir 5 - 8 minutes, or until crisp-tender. Drain any liquid off and pat dry with paper towel. Add diced Canadian bacon to vegetables; stir to combine and spoon mixture into crust.
2. Combine 1C. Egg Beaters, milk and Herbes de Provence. Season with black pepper, if desired; pour over vegetable mixture.
3. Bake 45 to 50 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before cutting or cool completely, cover and refrigerate to reheat and serve later.
