Number of Servings: 8


    6 8" flour tortillas
    1 lb 93% lean ground beef
    1 packet reduced sodium taco seasoning
    3/4 cup water
    1 box mexican rice mix
    1 can vegetarian refried beans
    1 cup cheese, divided


Cook ground beef over medium-high heat, crumbling as it cooks. Remove from heat and drain. Return to pan with taco seasoning and 3/4 cup water and cook until liquid is absorbed.

Meanwhile, cook rice according to package directions, omitting butter.

Line 9" x 13" glass casserole dish with two tortillas, trimming if necessary. Spread beans over tortillas. Add two more tortillas, ground beef, and half of the cheese. Add remaining tortillas, rice and top with remaining cheese.

Place in a 350 degree oven for 20 minutes or until cheese is melted and dish is heated through.

Serves 8.
