Ingredients

    1 green pepper, sliced
    1 yellow pepper, sliced
    1 red pepper, sliced
    1 clove garlic, minced
    1 onion, sliced
    1/2 tsp. black pepper
    1 can cream of chicken soup
    1-15 oz. can tomatoes with chili peppers
    6 oz fat-free cheddar, shredded
    3 flour tortillas
    12 oz. pork loin

Directions

Preheat the oven to 350 degrees Fahrenheit and grease a casserole dish with one tablespoon of olive oil.

Heat one tablespoon of olive oil in a frying pan over medium-high heat. Add the peppers, onion and garlic and saute until vegetables are slightly tender. Pour the vegetables into a bowl and set aside.

Heat one tablespoon of olive oil in a frying pan. Cut the pork into thin strips and fry until cooked through and no traces of pink remain.

Mix together the cream of chicken soup, canned tomatoes and black pepper. Add the cooked pork strips and stir gently to coat.

Place half of the flour tortillas on the bottom of the greased casserole dish, tearing them if necessary. Layer the tortillas with half of the pork mixture, half of the vegetables and half of the shredded cheese. Repeat all four layers.

Bake the casserole in the oven at 350 degrees Fahrenheit for 35 minutes. Remove the casserole from the oven and let it stand for five minutes before cutting into squares. Serve with toppings such as shredded lettuce, diced tomatoes, black olives and sour cream.
