    1/2C. oatmeal (can be instant or regular)
    3/4C. Egg Beaters
    3/4C. non-fat cottage cheese
    1 tsp. vanilla extract
    4 packets of Splenda
    sprinkle of cinnamon (if desired)
    1/2C. fresh (or thawed unsweetened frozen) blueberries
    Butter Flavored PAM


Combine all ingredients, except the blueberries, in a blender. Transfer mixture into a bowl or large Pyrex measuring cup and gently stir in the blueberries. Cook in heated skillet, lightly coated with butter flavored PAM, turning once.

Note: Consistencies can vary from one brand of cottage cheese to another, so you may need to adjust your amount of Egg Beaters to get your desired batter thickness.
