Introduction

Quick batter, easy to cook, delicious with sweet or savory fillings. We use low fat cottage cheese and fruit jelly for a quick meal that everyone will enjoy. Quick batter, easy to cook, delicious with sweet or savory fillings. We use low fat cottage cheese and fruit jelly for a quick meal that everyone will enjoy.
Number of Servings: 1

Ingredients

    2 large eggs
    1 cup flour
    1 1/2 cup milk (I use 1%)
    1 T canola oil
    1/4 tsp. salt

Directions

MIx all ingredients together thoroughly. Heat small lightly greased 6 inch skillet over medium-high heat. I use 2 skillets to shorten cooking time. I use a silicone brush to put a little canola oil on the pan between batches. Add 3 T batter to heated pan. Cook on one side until lightly browned. (Browning will be uneven and spotty looking.) Flip if desired to slightly brown the other side. Repeat until batter is gone.

Serving Size: makes 16 crepes (using 3 T batter per crepe)
