Number of Servings: 6


    6 Leeks, washed and chopped just past the green part

    6 Red potatoes. (I like to keep the skin on for more fiber)

    2 tbsp butter

    salt and pepper to taste

    6 cups of vegetable broth

    2 cups of lowfat buttermilk


melt butter in soup pot and add leeks. Allow to sweat for 20 minutes, stirring occassionally.

Add potatoes and broth and bring to a boil, then simmer 40 minutes.

With an immersion blender, blend until everything is uniform (mostly unless you like chunks) OR blend in batches in a blender.

Warm throughout as necessary and add buttermilk.

Serving Size: Makes 6 servings
