Ingredients

Chicken Breast, no skin, 12 ounces
Olive Oil, 2.5 1tsp
Sweet peppers (bell), 4 cup, sliced
Onions, raw, 1.5 cup, sliced
Zucchini, 2.5 cup, sliced
brown rice (1 cup cooked), 2 serving
Directions
Cook Brown Rice according to package directions. Saute Chicken in half of the Olive Oil. Remove from pan. Saute Peppers in remaining Olive Oil for about 4 min, add zucchini and continue to saute for 5 more minutes. Add onions and cooked Chicken. Continue to saute until vegetables are tender crisp, season to taste. I use Garlic, Salt, and Pepper. Add a little water at the end to make a little juice. Pour Chicken and vegetables over rice. Enjoy.
