    2.5 C chicken broth
    3 plum tomatoes, sliced
    2 eggs, lightly beaten
    1 TBSP light soy sauce
    dash toasted sesame oil
    dash seas salt
    dash white pepper
    1 TBSP cornstarch
    handful of fresh baby spinach
    2 scallions, sliced


Bring broth to a boil. Turn to simmer and add tomoatoes; cook 5 minutes or until softened. Add eggs slowly, stirring gently. Add soy sauce, sesame oil and other seasonings. Drop in spinach and cook until wilted. Stir in scallions and serve immediately
