Ingredients

    Beef, round steak, 16.2 oz
    Olive Oil, 2 tbsp
    Italian Salad dressing, 3 tbsp
    Black Olives, canned 6 large
    Pepper, black, 0.5 tsp
    *Balsamic Vinegar, 3 tbsp
    Onions, raw, 1 cup, chopped
    Zucchini, 2 cup, sliced
    Portabella Mushrooms, 226 Grams

Tips

The bulk of the fat in this meal comes from the olive oil so it's actually good fat.


Directions

1. Set oven control to broil. Spray broiler pan with cooking spray, remove fat from beef. Place beef, squash, mushrooms and onions on rack in pan. Mix olive oil, dressing, vinegar and pepper. Reserve 1 tablespoon of dressing mixture. Brush Half of remaining mixture over beef and vegetables.
2. Broil with tops of beef and vegetables 3 to 4 inches from heat 5 minutes. Turn beef. Brush with other half of dressing mixture. Broil 5 minutes longer or until desired doneness and vegetables are crisp and tender.
3. Cut beef into 4 servings, divide among 4 dinner plates. Stir reserved dressing mixture and olives into vegetables. Divide among plates.
