    Coucous 1 cup dry (whole grain)
    2 cups boiling water
    1/2 cup rough chopped almonds
    1/2 cup currants
    1 tsp ground ginger
    1 tsp cinnamon
    1 tsp cumin
    dash of red pepper, salt, black pepper
    1 tbsp olive oil (I use a fruity one)


Can be microwaved to reheat, about 20-40 seconds depending on your oven.


Pour 2 cups boiling water over couscous, let sit covered for 5 minutes or until all the water is absorbed. Add almonds, currants and spices - add a dash of red pepper, salt and black pepper. Mix thoroughly. Add olive oil (I use a fruity olive oil) and mix again. Let stand for 2 hours or refrigerate to let the flavors blend.
