1/4 C Kraft Light Done Right Italian Salad Dressing
1 lb Chicken Breast, no skin, cut into chunks
1/2 C White Wine
1 C cooked Brown Rice, long grain
4 oz Low fat cream cheese, cubed
8 oz Spinach, fresh
1 large Tomato, chopped
2 Tbs Parmesan Cheese, grated
Tips
Very filling.
Directions
HEAT dressing in Dutch oven or large deep skillet on medium-high heat. Add chicken; cook 3 min., stirring occasionally. Stir in wine; bring to boil. Add rice and cream cheese, cook 2 to 3 min. or until melted, stirring frequently. Add spinach. (Pan will be full.) Cook, covered, 1 min. or until spinach is wilted. Stir gently to mix in spinach.
REMOVE pan from heat. Let stand, covered, 5 min. Stir in tomatoes; top with Parmesan.
Serving Size: Makes 4 1.5 cup servings
