Number of Servings: 4


    Pork Chops - (approx. 1 lb. for 4 servings)
    1 can diced tomatoes
    1 can water
    1 cup brown rice
    1 onion sliced or diced
    1 tsp olive oil (or you can use cooking spray)


1. Heat oil in non-stick skillet.
2. Add onions (leave out if you hate onions) and pork chops. Brown pork chops on both sides (do not have to cook all the way through at this point.)
3. Remove pork chops from pan.
4. Add brown rice to pan and sautee slightly. Add can of tomatoes and 1 can of water. Stir and bring to a boil.
5. Reduce heat to a low simmer. Add pork chops to the top of the rice mixture. Cover and simmer on low till rice is cooked and pork chops have steamed to finish cooking. (approx. 30 minutes)

Try not to remove the lid often during cooking so that the rice will steam properly.

Serve with brussel sprouts or other steamed veggies and/or a green salad on the side.

**Note: The cooking time is based regular 'brown rice' not wild rice which may take longer to cook nor instant rice which would take a much shorter time. Adjustments may be needed if you use a different type of rice.
