This is a filling meal on a cold day This is a filling meal on a cold day
Number of Servings: 4


    2lbs of leeks, green parts removed, sliced, and washed
    8oz of fresh mozarella
    1cup fresh basil, chopped
    1tsp sherry or wine vinegar
    1tbsp. olive oil
    salt or pepper to taste

    Fresh Bread (I use a wheat loaf from my local bakery)


in a shallow baking dish, layer the leeks and basil and top with mozzarella slices that are 1/4 inch thick.

Place under the broiler until cheese starts to brown (6-10 minutes)

mix oil and vinegar and pour on top. add salt and pepper to taste.

Serve with a slice of bread.
