    Whole Grain Rotini (13.25 oz box)
    Olive Oil
    1 small onion
    1 glove garlic
    1 bell pepper
    1 small summer squash
    1 bunch asparagus (tips only)
    1 pint cherry tomatoes
    4 leaves basil

    Salt & pepper to taste


The original recipe calls for zucchini, which I did not have so it was omitted from the calorie count.


Cook pasta according to directions on box.

Heat olive oil and saute onion for 3-4 minutes.

Add peeled garlic. Cook 1 minute.

Add pepper, squash, and asparagus. Saute 5 minutes.

Add tomatoes. Season with salt & pepper if desired. Saute 2 minutes. Remove garlic.

Combine veggies with pasta. Toss with basil.


Serving Size: Makes 6 servings.
