Introduction

Was looking for a recipe for escarole and found this in my grandma's cook book. I just substituted pinto beans for white beans. Was looking for a recipe for escarole and found this in my grandma's cook book. I just substituted pinto beans for white beans.
Number of Servings: 4

Ingredients

    - 3 Tbs. olive oil
    - 1/2 leek or small onion
    - 1 head escarole
    - 1 can organic pinto beans (or white beans)
    - 1 - 2 cloves garlic, minced
    - 1 - 2 Tbs fresh parsley
    - red pepper flakes (if desired)
    - salt and pepper (to taste)

Directions

1) Heat 2 tablespoons olive oil in a large skillet over medium heat. Toss in ripped escarole, turning frequently. Season with salt, pepper, and red pepper flakes to taste. Stir occasionally until tender.
2) In another smaller skillet, heat remaining tablespoon of olive oil and minced garlic. Add beans with juices and cook until creamy. Stir in escarole mixture and parsley and simmer for 5 - 10 minutes more.

Serving Size: Serves approximately 4
