Introduction

I make this and divide it between 6 12 oz. jelly jars, so it' s easy to take one to work and warm it in the microwave. I make this and divide it between 6 12 oz. jelly jars, so it' s easy to take one to work and warm it in the microwave.

Ingredients

    Beeler's Breakfast Sausage, 16 oz
    Egg, fresh, 12 large
    Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 0.5 cup
    Baby Bella aka Baby Portabella Mushrooms, 10 oz
    Spinach (Baby) - Earthbound Farms Organic, 6 cups

Directions

Rinse and cook Quinoa in water with salt & pepper.

Brown sausage, and when mostly browned add diced mushrooms and cook until browned and shriveled, then add spinach and stir, cooking until wilted. Add salt & pepper.

Whisk eggs with salt & pepper, then stir into sausage mixture until eggs are mostly set (do not dry them out.)

Spread out mixture on a platter to cool, then divide evenly between jars. Screw on lids when contents are completely cooled and ready to refridgerate. They will keep for several days in the fridge.

Serving Size: Makes enough to fill 6 12oz. jelly jars
