    2 tbsp Olive Oil
    1/2 large Onion, wedged
    4 Chicken Thighs
    2 tbsp Whole Wheat Flour
    3 1/2 cups Low-fat, Low-sodium Chicken Broth (1 box)
    1 tbsp Garlic Powder
    2 tbsp Basil
    1 tbsp Oregano
    1 tbsp Ground Ginger (or you can saute fresh ginger in begining)
    1/2 cup Brown Rice (uncooked)
    1 can Kidney Beans (or any other kind of bean)
    1/3 bag of Mixed Vegetables, frozen (2 1/2 lb bag = 14 oz of veggies)


Heat oil in bottom of large pot. Lightly soften onion until soft. Add chicken and flour. Stir to coat everything. Add chicken broth and remaining ingredients except veggies. Bring to a boil, then simmer until rice and chicken are cooked - about 45 min. Add vegetables and serve when heated.

Makes 4 hearty servings.
