    Portabella Mushroom (1 med cap/approx 3.5 oz), 3.5 oz
    *Balsamic Vinegar, 1 tbsp
    Olive Oil, 1 tbsp
    Garlic powder, 2 tsp
    Salt, 1 tsp
    Pepper, black, 1 tsp
    Bell Pepper 1/4 cup thinly sliced strips
    Onions 1/4 cup thinly sliced strips
    Sandwich baggie or a bowl


This can be lower in fat by not using olive oil and substitute with lemon juice in the Balsamic mixture and use I can't believe it's butter to saute the peppers and onions


In sandwich baggie put the Balsamic Vinegar, olive oil, salt, pepper, & garlic powder. Mix well. This will be rather thick. Remove stem from mushroom and discard, rinse the mushroom cap then put into the baggie. Work the Balsamic mixture all over the cap. Let it set while you slice the bell peppers and onions. Then saute the peppers & onion in small pan with about 1-2 tsp olive oil till they are tender. Put a piece of foil and a cookie sheet pan and then remove mushroom cap from baggie and place on foil. Pour the remaining Balsamic mixture into the cap of the mushroom. Let bake in oven for 10 minutes at 325 then turn over and bake another 10 minutes. When done place mushroom cap on plate and top with the peppers & onions.
