    5 cups of water
    1/4 c. white or red miso
    salt (for taste)
    1 c. frozen shelled edamame
    4 oz (4 c) baby spinach
    3/4 lb. shelled & deveined med. shrimp cut into 1/2 inch pieces
    7 oz firm tofu cut into 1/2 inch cubes
    2 T. thinly sliced scallion

    cooked brown rice ( I used only 1/2 c. per bowl of soup)


The recipe called for steamed short-grain rice, and doesn't indicate how much rice to use. I chose the brown and used only 1/2 cup.


In a small bowl, whisk 1 cup of the water into the miso. In a 4 qt sauce pan, bring the remaining 4 c. of water and a pinch of salt to a boil. Add the edamame, cover and cook until tender, about 5 minutes. Add the spinach in bunches and stir to wilt. Add the shrimp and tofu. Stir the miso mixture and add to the soup. Simmer just until the shrimp are cooked, about 1 minute. Season the soup with salt and stir in the scallion. Laded the soup into deep bowl and serve with the rice.

Serving Size: makes approx 4 1-1/2 c. servings with 1/2 c. rice
